Responsibilities
- Prepare and cook complete meals and specialty foods for banquets and regular service.
- Estimate food and labour costs; maintain records of costs, consumption, sales, and inventory.
- Supervise specialist chefs, cooks, kitchen helpers, and other kitchen staff.
- Create new recipes and demonstrate techniques and equipment to kitchen staff.
- Instruct staff in preparation, cooking, garnishing, and presentation of food.
- Plan menus and consult on weddings, banquets, and specialty functions.
- Arrange equipment purchases and repairs; recruit, hire, and train kitchen staff as needed.
- Follow hotel policies and maintain a confidential, secure work area.
Requirements
- Red Seal or equivalent chef experience strongly preferred.
- Banquet and high-volume kitchen leadership experience is an asset.
- Strong food safety, costing, and team leadership skills.
