Responsibilities

  • Prepare and cook complete meals and specialty foods for banquets and regular service.
  • Estimate food and labour costs; maintain records of costs, consumption, sales, and inventory.
  • Supervise specialist chefs, cooks, kitchen helpers, and other kitchen staff.
  • Create new recipes and demonstrate techniques and equipment to kitchen staff.
  • Instruct staff in preparation, cooking, garnishing, and presentation of food.
  • Plan menus and consult on weddings, banquets, and specialty functions.
  • Arrange equipment purchases and repairs; recruit, hire, and train kitchen staff as needed.
  • Follow hotel policies and maintain a confidential, secure work area.

Requirements

  • Red Seal or equivalent chef experience strongly preferred.
  • Banquet and high-volume kitchen leadership experience is an asset.
  • Strong food safety, costing, and team leadership skills.
